Tuck into pea and ham soup, Southport potted shrimps with toasted English muffin and deep-fried parsley to start, followed by Gressingham duck breast buttered kale, parsnip puree and crispy parsnip or the delicate slow-cooked pork belly with peppered pork fillet and pressed potato black pudding, Lancashire cheese and a caramelised apple puree - or go for a succulent fillet steak. Options to drift away with include honeycomb parfait with hazelnuts for pudding. To try dishes such as these and many more, the tasting menu offers a comprehensive taste voyage, with seven courses for £40 a head.
